SPECIAL PROCESS: Honey Wet-Hulled with Dry Fermentation

Grown in the Sumatra's Ajibata district on the eastern shore of Lake Toba at an altitude of 1350 meters by smallholder farmers, this lot of Caturra and Linie S cultivars was processed at the Yudi Putra Mill using a fusion method of honey wet-hulling, which involves (1) the removal of the fruit skin, (2) a 24 hour dry fermentation, (3) partial drying on patios, (4) the removal of the coffee seed from parchment and pulp, and (5) completed patio drying to standard moisture content.Tasting Notes: Dark chocolate, brandy, cedar, and cherry with a syrupy body and a complex finish.
