Codex V: Riacho Doce, Brazil

This selection of Red and Yellow Catuai cultivars was grown at 3100 feet on the Vitoria da Conquista plateau in the Planalto de Bahia region of Brazil on Marinalva Ivo des Neves’ farm called Fazenda Riacho Doce (translated “sweet water stream”) and was fully washed, fermented for 12 to 15 hours, and slowly dried in greenhouses.
