SPECIAL PROCESS: Fully Washed with Extended Fermentation

Grown by Luis and Rigoberto Herrera on their farm Finca Las Margaritas, located at 1510 – 1700 meters above sea level in the Valle del Cauca department of Colombia’s Calcedonia region, this selection of Bourbon cultivars was processed using an experimental technique involving full washing after extended 78 hour in-mucilage fermentation period, followed by 48 hours of rest in a silo, 48 hours on solar drying beds, and finally an extended drying period in a silo to a achieve a target moisture content.
